- 1 lb ground turkey or chicken
- 1 cup diced bell peppers (mixed colors)
- 2 tsp taco seasoning

- 1 ripe avocado, diced
- Fresh cilantro, chopped (to taste)
- Juice of 1 lime
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes, prick them with a fork, and bake directly on the oven rack for 45-50 minutes until tender.
- In a skillet over medium heat, sauté diced bell peppers for about 5 minutes until soft.
- Add the ground turkey or chicken to the skillet and cook until browned.
- Stir in black beans, taco seasoning, and salsa; simmer for another 5 minutes.
- Once sweet potatoes are baked, slice them open lengthwise and fill with the turkey mixture.
- Top with diced avocado, cilantro, and a squeeze of lime juice before serving.
