Instructions
- Wash and chop rhubarb into 1-inch pieces; set aside.
- In a medium saucepan over medium heat, combine chopped rhubarb, sugar, lemon juice, water, and vanilla extract. Stir gently.
- Bring to a gentle simmer, stirring occasionally until the mixture thickens (about 10-15 minutes).
- Taste and adjust sweetness with additional sugar if needed.
- Remove from heat and let cool before transferring to jars. Store in the refrigerator.
Notes
- For added flavor, swap vanilla extract for almond extract or add a pinch of cinnamon.
- Mix in strawberries or apples for extra sweetness and texture variations.
