- 1 cup all-purpose flour
- 1 cup bran flakes (crushed)
- 1/2 cup brown sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup milk (whole or plant-based)
- 1/4 cup vegetable oil (or melted coconut oil)
- 2 large eggs
- 3/4 cup raisins
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
- In a large bowl, whisk together flour, bran flakes, brown sugar, baking powder, cinnamon, and salt until combined.
- In another bowl, mix milk, vegetable oil, and eggs until smooth.
- Gently fold the crushed bran flakes into the wet mixture; let soak for a few minutes.
- Pour the wet ingredients into the dry ingredients slowly while stirring gently until just combined.
- Carefully fold in the raisins until evenly distributed.
- Fill muffin tins about three-quarters full with batter.
- Bake for 18–20 minutes or until golden brown and a toothpick comes out clean.
- Allow muffins to cool in the pan for five minutes before transferring to wire racks.
Notes
- Feel free to add chopped nuts or dried fruit instead of raisins for a unique twist! Store any leftovers in an airtight container at room temperature for up to three days.
