  • 1 cup bran flakes (crushed)
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup milk (whole or plant-based)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 3/4 cup raisins

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together flour, bran flakes, brown sugar, baking powder, cinnamon, and salt until combined.
  3. In another bowl, mix milk, vegetable oil, and eggs until smooth.
  4. Gently fold the crushed bran flakes into the wet mixture; let soak for a few minutes.
  5. Pour the wet ingredients into the dry ingredients slowly while stirring gently until just combined.
  6. Carefully fold in the raisins until evenly distributed.
  7. Fill muffin tins about three-quarters full with batter.
  8. Bake for 18–20 minutes or until golden brown and a toothpick comes out clean.
  9. Allow muffins to cool in the pan for five minutes before transferring to wire racks.
