- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- In a mixing bowl, blend softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, and cinnamon until smooth.
- Refrigerate the mixture for about 30 minutes until firm.
- Scoop out portions and roll them into bite-sized balls (about 1 inch in diameter), placing them on a parchment-lined baking sheet.
- Melt chocolate chips with coconut oil in a microwave-safe bowl until smooth. Dip each truffle into the melted chocolate and return them to the baking sheet.
- Let the truffles set at room temperature or refrigerate for 15-20 minutes.
Notes
- Experiment with crushed gingersnaps instead of graham crackers for added flavor.
- A sprinkle of sea salt can enhance sweetness.
