  • 1 ¾ cups all-purpose flour
  • ¾ cup cocoa powder (Dutch-processed)
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup unsalted butter, room temperature
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup buttermilk
  • 2 cups sweetened coconut flakes
  • 1 cup chopped pecans (toasted)
  • 1 cup sweetened condensed milk
  • 4 egg yolks
  • ½ cup unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round baking pans and line with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually combine dry ingredients with buttermilk until just mixed.
  5. Divide the batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. For the frosting, combine egg yolks, sweetened condensed milk, and butter in a saucepan over medium heat. Stir until thickened (about 10 minutes). Remove from heat and add toasted pecans and coconut flakes.
  7. Once the cakes are cool, layer generously with frosting in between the cakes and on top.

Notes

  •  For added texture, consider substituting almond flakes for coconut.
  •  Try adding chocolate chips to the batter for extra flavor.
