- 1 ¾ cups all-purpose flour
- ¾ cup cocoa powder (Dutch-processed)
- 1 ½ cups granulated sugar
- ½ cup brown sugar
- 1 tsp baking powder
- 1 tsp salt
- 1 cup unsalted butter, room temperature
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup buttermilk
- 2 cups sweetened coconut flakes
- 1 cup chopped pecans (toasted)
- 1 cup sweetened condensed milk
- 4 egg yolks
- ½ cup unsalted butter
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round baking pans and line with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time and mix in vanilla.
- Gradually combine dry ingredients with buttermilk until just mixed.
- Divide the batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- For the frosting, combine egg yolks, sweetened condensed milk, and butter in a saucepan over medium heat. Stir until thickened (about 10 minutes). Remove from heat and add toasted pecans and coconut flakes.
- Once the cakes are cool, layer generously with frosting in between the cakes and on top.
Notes
- For added texture, consider substituting almond flakes for coconut.
- Try adding chocolate chips to the batter for extra flavor.
