- 4 ripe peaches, halved and pitted
- 8 oz fresh burrata cheese
- 4 cups arugula
- 2 tbsp extra virgin olive oil (plus more for grilling)
- 2 tbsp balsamic glaze
- Salt and pepper, to taste
- 1/3 cup walnuts or pecans (optional, toasted)
Instructions
- Preheat grill to medium-high heat.
- Brush peach halves with olive oil and place cut-side down on the grill. Grill for about 3-4 minutes until caramelized.
- In a large bowl, toss arugula with olive oil, salt, and pepper.
- Once peaches are grilled, arrange arugula on a serving platter. Top with grilled peaches and dollop burrata in between.
- Drizzle with balsamic glaze and sprinkle with nuts if using.
Notes
- For a tangy twist, substitute burrata with goat cheese or feta.
- Fresh herbs like basil can add an aromatic touch to the salad.
