Ingredients
Scale
- 4 medium zucchinis, sliced lengthwise
- 3 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- Juice of 1 lemon (about 2 tablespoons)
- Fresh herbs (basil or parsley, optional)
Instructions
- 1. Wash and thoroughly dry the zucchinis. Slice them lengthwise into half-inch pieces.
- 2. In a mixing bowl, combine zucchini slices with olive oil, garlic powder, salt, pepper, and lemon juice until well coated.
- 3. Preheat the grill to medium-high heat (400°F / 200°C). If available, use a grill basket.
- 4. Place the seasoned zucchini on the grill grates. Grill for about 4-5 minutes per side until charred and tender but still slightly crisp.
- 5. Transfer to a serving plate and sprinkle with fresh herbs if desired. Serve warm.
Notes
- For added flavor, consider marinating the zucchini in olive oil and seasonings for at least 30 minutes before grilling.
- Experiment with different herbs or spices to customize your grilled zucchini.
