Memorial Day Grilled Zucchini is a fresh, vibrant side dish that elevates any summer gathering with its smoky flavor and easy preparation. Perfectly charred, it’s a must-try!

  • Total Time: 20 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 4 medium zucchinis, sliced lengthwise
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon (about 2 tablespoons)
  • Fresh herbs (basil or parsley, optional)

Instructions

  1. 1. Wash and thoroughly dry the zucchinis. Slice them lengthwise into half-inch pieces.
  2. 2. In a mixing bowl, combine zucchini slices with olive oil, garlic powder, salt, pepper, and lemon juice until well coated.
  3. 3. Preheat the grill to medium-high heat (400°F / 200°C). If available, use a grill basket.
  4. 4. Place the seasoned zucchini on the grill grates. Grill for about 4-5 minutes per side until charred and tender but still slightly crisp.
  5. 5. Transfer to a serving plate and sprinkle with fresh herbs if desired. Serve warm.

Notes

  • For added flavor, consider marinating the zucchini in olive oil and seasonings for at least 30 minutes before grilling.
  •  Experiment with different herbs or spices to customize your grilled zucchini.
