- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
 - 1/4 cup olive oil
 - 1/4 cup fresh lemon juice
 - 2 tsp dried oregano
 - 1 tsp garlic powder
 - 1 tsp smoked paprika
 - Salt and pepper to taste
 - Pita bread or skewers for serving
 
Instructions
- In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, paprika, salt, and pepper.
 - Cut the chicken into bite-sized cubes and add to the marinade, stirring to coat. Marinate for at least 30 minutes.
 - Preheat the grill to medium heat (around 400°F).
 - Thread the marinated chicken onto skewers.
 - Grill the skewers for 10-15 minutes, turning occasionally until golden brown and cooked through (internal temperature of 165°F).
 - Serve hot with warm pita bread and your choice of fresh veggies or tzatziki sauce.

- For extra flavor, marinate the chicken overnight.
 - Feel free to substitute lemon juice with lime or incorporate fresh herbs like dill or parsley for a unique twist.
