- 1 lb gnocchi (fresh or frozen)
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Add gnocchi and cook until they float (about 2-3 minutes). Drain and set aside.
- In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant. Add cherry tomatoes and cook until softened (about 4 minutes).
- Pour in heavy cream, season with salt and pepper, and let simmer for 5 minutes.
- Stir in fresh spinach until wilted (about 2 minutes). Gradually add Parmesan cheese while stirring until melted.
- Toss the cooked gnocchi into the sauce, mixing well to coat. Garnish with fresh basil before serving.
