- 1 crusty baguette, sliced into ½-inch pieces
- 4 tablespoons extra virgin olive oil, divided
- 1 cup cherry tomatoes, diced
- 1 cup fresh basil leaves, chopped
- 4 ounces goat cheese, softened (or ricotta)
- 1 garlic clove, peeled
- 2 tablespoons balsamic reduction
Instructions
- Preheat oven to 400°F (200°C) and arrange baguette slices on a baking sheet.
- Brush each slice with 2 tablespoons of olive oil and sprinkle with salt. Bake for 5-7 minutes until golden brown, flipping halfway through.
- Rub the garlic clove onto each toasted slice to infuse flavor.
- In a bowl, mix diced cherry tomatoes, chopped basil, remaining olive oil, salt, and pepper.
- Spread goat cheese on each toast and top with the tomato-basil mixture. Drizzle with balsamic reduction.
- Serve immediately on a platter and enjoy!
