- 2 lbs Yukon Gold potatoes, peeled and cubed
- 1/2 cup unsalted butter
- 1/2 cup whole milk
- 1/2 cup finely chopped green onions
- 1 cup chopped kale or cabbage
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain well.
- Return hot potatoes to the pot and mash until smooth.
- Stir in butter until melted, then add warm milk until desired creaminess is achieved.
- Fold in green onions and chopped kale or cabbage evenly.
- Season with salt and pepper before serving warm.
Notes
- For a richer flavor, consider adding minced garlic or swapping out kale for cabbage.
- If preparing in advance, store in an airtight container and reheat gently with a splash of milk to restore creaminess.
