- 2 cups finely grated carrots
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 tsp ground cinnamon
- 1/2 cup chopped walnuts (optional)
- 2 tsp vanilla extract
- 3 large eggs
- 1 cup all-purpose flour
- 1/2 cup melted butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- For the crust, mix melted butter and granulated sugar in a bowl. Stir in flour until combined. Press into the bottom of the prepared pan.
- In another bowl, beat cream cheese and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Fold in grated carrots, cinnamon, and optional nuts until fully combined.
- Pour half of the carrot mixture over the crust, then layer with the remaining cream cheese mixture. Swirl gently with a knife for effect.
- Bake for 30-35 minutes or until edges are golden and center is set but slightly jiggly. Allow to cool completely before slicing.
Notes
- Use freshly grated spices for enhanced flavor.
- For added sweetness, consider folding in raisins or shredded coconut.
- Store leftovers in an airtight container in the fridge for up to five days.
