Peanut Butter Banana Breakfast Bake is a delicious, easy-to-make dish that combines sweet bananas and creamy peanut butter, perfect for a cozy breakfast or brunch gathering.

  • Total Time: 45 minutes
  • Yield: Serves 9

Ingredients

Scale
  • 2 ripe bananas
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 1 cup whole milk (or plant-based milk)
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Stir in the eggs, milk, and peanut butter until well combined.
  4. Mix in the brown sugar and vanilla extract until dissolved.
  5. In another bowl, whisk together the flour, baking powder, and cinnamon. Gradually fold this dry mixture into the wet ingredients until just combined.
  6. Pour the mixture into the prepared baking dish and bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  7. Allow to cool slightly before cutting into squares and serving warm.

Notes

  • For added texture, consider folding in some chopped nuts or swapping bananas for apples or berries.
  •  Store leftovers in an airtight container in the fridge for up to five days; reheat in the microwave as needed.
