- 2 ripe bananas
- 1 cup creamy peanut butter
- 2 large eggs
- 1 cup whole milk (or plant-based milk)
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, mash the ripe bananas until smooth.
- Stir in the eggs, milk, and peanut butter until well combined.
- Mix in the brown sugar and vanilla extract until dissolved.
- In another bowl, whisk together the flour, baking powder, and cinnamon. Gradually fold this dry mixture into the wet ingredients until just combined.
- Pour the mixture into the prepared baking dish and bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
- Allow to cool slightly before cutting into squares and serving warm.
Notes
- For added texture, consider folding in some chopped nuts or swapping bananas for apples or berries.
- Store leftovers in an airtight container in the fridge for up to five days; reheat in the microwave as needed.
