- 2 ripe avocados
- 1 cup cherry tomatoes, diced
- ¼ cup fresh basil leaves, chopped
- 2 tbsp balsamic glaze
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cut the avocados in half and carefully remove the pits. Scoop out a small amount of flesh to create room for stuffing.
- In a bowl, combine diced cherry tomatoes, chopped basil, olive oil, salt, and pepper.
- Generously fill each avocado half with the tomato-basil mixture.
- Drizzle balsamic glaze over the stuffed avocados.
- Serve immediately on a platter and enjoy!
Notes
- For an added twist, substitute feta cheese for mozzarella or mix in some black beans for protein.
- To keep avocados from browning before serving, sprinkle lemon juice on exposed flesh.
