- 2 large eggs
- 3 green onions, chopped

Instructions
- Grate the zucchini and squeeze out excess moisture.
- In a large bowl, mix the grated zucchini, corn kernels, flour, baking powder, chopped green onions, salt, and pepper. Stir in the eggs until fully combined.
- Heat about half an inch of oil in a skillet over medium heat until hot.
- Drop spoonfuls (about 2 tablespoons each) of the mixture into the oil and fry until golden brown on both sides (about 3-4 minutes per side).
- Remove fritters with a slotted spoon and drain on paper towels. Serve warm.

- For added flavor, mix in fresh herbs like parsley or dill.
- To make it gluten-free, substitute all-purpose flour with gluten-free flour.
