- 3 lbs beef short ribs
- 2 medium sweet onions, chopped
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1 tsp dried thyme
- 1 tsp black pepper
- Optional: 2 cups chopped carrots
- Optional: 2 cups diced potatoes
Instructions
- Gather and prepare all ingredients by chopping onions and mincing garlic.
- In a skillet over medium-high heat, sear the beef short ribs for about 3-4 minutes on each side until browned.
- Place the seared ribs into a crock pot. Add onions, garlic, soy sauce, brown sugar, thyme, black pepper, and beef broth. Mix well and add optional carrots and potatoes if desired.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours until the meat is tender.
- Carefully remove short ribs from the crock pot and serve with mashed potatoes or rice to enjoy the rich sauce.

- Feel free to swap vegetables based on what you have at home—mushrooms or sweet potatoes work wonderfully.
- For extra moisture when reheating leftovers, add a splash of broth.
