- 4 boneless skinless chicken breasts
- 2 tbsp extra virgin olive oil
- 2 cups fresh spinach
- ½ cup sun-dried tomatoes packed in oil
- 1 cup heavy cream
- 4 garlic cloves, minced
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- ¼ cup pine nuts (optional)
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat until shimmering.
- Sear each side of the chicken for 5-7 minutes until golden brown. Remove from the pan and set aside.
- In the same skillet, sauté minced garlic until fragrant (about 30 seconds), then add fresh spinach and cook until wilted.
- Pour in heavy cream, stir in sun-dried tomatoes and Italian seasoning, scraping the bottom of the pan.
- Gradually whisk in Parmesan cheese until melted and smooth.
- Return the seared chicken to the sauce and simmer for about 5 minutes to absorb flavors.
Notes
- For added crunch, toast pine nuts before sprinkling on top.
- Try substituting kale for spinach or adding different seasonal vegetables for variety.
- Store leftovers in an airtight container; reheat gently on low heat.
