- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 garlic cloves, minced
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 2 tbsp capers
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Pound the chicken breasts to about 1/2 inch thickness and season both sides with salt and pepper.
- Dredge each breast in flour, shaking off the excess.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown and cooked through. Remove from skillet.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add lemon juice and chicken broth, scraping up any browned bits.
- Stir in heavy cream and capers; simmer for another minute until slightly thickened. Return the chicken to the skillet and cook together for an additional minute before serving.
- Garnish with fresh parsley.
Notes
- For a twist, substitute lemon juice with lime juice or add extra capers for more flavor.
- Serve alongside garlic mashed potatoes or a fresh green salad for a complete meal.
