- 1 lb ground turkey
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup chopped bell peppers
- 1/2 cup chopped onions
- 12 egg roll wrappers
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp garlic powder
- Salsa or guacamole for dipping
Instructions
- In a large skillet, brown the ground turkey over medium heat for about 5-7 minutes until no longer pink. Stir in chopped veggies and spices; cook until fragrant.
- Lay one egg roll wrapper on a clean surface. Spoon 2 tablespoons of filling onto the center, fold in the sides, and roll tightly.
- Heat oil in a deep pot to 350°F (175°C). Carefully fry 3-4 egg rolls at a time for about 3-4 minutes until golden brown.
- Remove from oil and drain on paper towels before serving with salsa or guacamole.
