Instructions

  1. In a large skillet, brown the ground turkey over medium heat for about 5-7 minutes until no longer pink. Stir in chopped veggies and spices; cook until fragrant.
  2. Lay one egg roll wrapper on a clean surface. Spoon 2 tablespoons of filling onto the center, fold in the sides, and roll tightly.
  3. Heat oil in a deep pot to 350°F (175°C). Carefully fry 3-4 egg rolls at a time for about 3-4 minutes until golden brown.
  4. Remove from oil and drain on paper towels before serving with salsa or guacamole.
