Instructions
- Cook the rotini pasta according to package instructions until al dente; drain and set aside.
- In a large skillet over medium heat, brown the ground turkey until crumbly. Add the chopped onion and bell peppers; sauté until softened.
- Stir in taco seasoning and diced tomatoes (with juices); cook for about 5 minutes to combine flavors.
- Mix in the cooked pasta until well-coated with sauce.
- Sprinkle shredded cheese on top and stir until melted.
- Garnish with fresh cilantro if desired, and serve hot.
