- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 sponge cake (store-bought or homemade)
- 1 cup whipped cream, lightly sweetened
Instructions
- Prepare your ingredients by washing and slicing the strawberries.
- In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread an even layer of the cheesecake filling over the sponge cake, leaving a half-inch border at the edges.
- Sprinkle the sliced strawberries evenly over the cream cheese layer.
- Starting from one end, roll the cake tightly into a log shape. Wrap in plastic wrap and chill for about an hour.
- After chilling, slice into pinwheels and serve with additional whipped cream or fresh strawberries.
Notes
- Use room temperature cream cheese for easier blending.
- For a different flavor profile, substitute strawberries with raspberries or blueberries, or add a splash of lemon zest for extra brightness.
