- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 3 large eggs, room temperature
- 1 tsp vanilla extract

Instructions
- Preheat the oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture firmly into the bottom of the prepared pan.
- In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Add eggs one at a time, mixing in vanilla extract until fluffy.
- Gently fold in sliced strawberries into the cream cheese mixture without squishing them.
- Pour filling over the crust and bake for 30-35 minutes until set but slightly wobbly in the center.
- Let cool on a wire rack, then refrigerate for at least 4 hours before slicing.
