- 1 lb flank or sirloin steak
- 4 cups mixed greens (arugula, spinach, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat grill or skillet over medium-high heat. Season steak with salt and pepper. Grill for 4-5 minutes per side until medium-rare.
- Let the steak rest for 5-10 minutes before slicing against the grain.
- While the steak rests, chop mixed greens and slice the cherry tomatoes and cucumber.
- In a large bowl, combine mixed greens, tomatoes, cucumbers, and onions. Drizzle with olive oil and balsamic vinegar; toss gently to coat.
- Arrange dressed salad on plates and top with sliced steak. Add additional salt and pepper if desired.
