- 1 cup fresh spinach, chopped
- 1 cup cottage cheese

Instructions
- Preheat your oven to 375°F (190°C).
- Sauté chopped spinach in a skillet over medium heat until wilted, about 3-4 minutes.
- In a large bowl, combine cottage cheese, eggs, olive oil, and sautéed spinach until well mixed.
- Gradually add flour, baking powder, and salt to form a soft dough.
- On a floured surface, knead the dough gently until smooth. Divide into equal portions and shape into bagel-like circles with holes in the middle.
- Place on a greased baking sheet and bake for 20-25 minutes or until golden brown.
Notes
- Experiment with adding fresh herbs such as dill or chives for extra flavor.
- For a gluten-free option, substitute all-purpose flour with gluten-free flour blends.
