Instructions
- Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, cinnamon, and salt.
- In a separate bowl, beat softened butter with granulated and brown sugars until light and fluffy, about 3 minutes.
- Add the egg and vanilla; mix until combined.
- Gradually stir in the dry ingredients until just combined.
- In a small bowl, mix sugar and cinnamon for rolling.
- Scoop dough into balls, roll in cinnamon-sugar mixture, and place on prepared baking sheets.
- Bake for 8-10 minutes or until edges are golden but centers remain soft. Cool on the baking sheet for 5 minutes before transferring to wire racks.
Notes
- For extra chewy cookies, chill the dough for about 30 minutes before baking.
