- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 large yellow onion, chopped
- 2 bell peppers (red or yellow), chopped
- 2 cups low-sodium chicken broth
- 2 tsp Italian seasoning
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Chop the onion and bell peppers into bite-sized pieces and mince the garlic.
- In a hot skillet over medium heat, sear each chicken breast for about 2 minutes per side until golden brown.
- Place the seared chicken in the slow cooker. Add chopped vegetables and pour in the chicken broth. Sprinkle with Italian seasoning.
- Drizzle fresh lemon juice over the top.
- Cover and cook on low for 6-8 hours or high for 4 hours until chicken is tender and easily shreds with a fork.
