  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 (14.5 oz) can diced tomatoes (preferably fire-roasted)
  • 1 (15 oz) can tomato sauce
  • 2 tsp dried Italian herbs (oregano, basil, thyme)
  • 2 cups pasta shells or broken lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
  2. Stir in ground beef or turkey and cook until browned, about 5-7 minutes.
  3. Add canned diced tomatoes and tomato sauce; let simmer for about 3 minutes before adding dried herbs.
  4. Mix in pasta shells or broken lasagna noodles, stirring well. Simmer according to package instructions until al dente.
  5. Reduce heat and stir in ricotta cheese until smooth. Top with shredded mozzarella and cover for 5 minutes to melt.
  6. Serve hot, garnished with fresh basil leaves if desired.
