- 1 lb lean ground beef or turkey
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 (14.5 oz) can diced tomatoes (preferably fire-roasted)
- 1 (15 oz) can tomato sauce
- 2 tsp dried Italian herbs (oregano, basil, thyme)
- 2 cups pasta shells or broken lasagna noodles
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
- Stir in ground beef or turkey and cook until browned, about 5-7 minutes.
- Add canned diced tomatoes and tomato sauce; let simmer for about 3 minutes before adding dried herbs.
- Mix in pasta shells or broken lasagna noodles, stirring well. Simmer according to package instructions until al dente.
- Reduce heat and stir in ricotta cheese until smooth. Top with shredded mozzarella and cover for 5 minutes to melt.
- Serve hot, garnished with fresh basil leaves if desired.
Notes
- For a vegetarian version, substitute meat with mushrooms or lentils.
- Customize by adding extra veggies like spinach or zucchini.
