Ingredients
Scale
- 1 lb ground beef (or turkey)
- 1 medium onion, chopped
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 tbsp Worcestershire sauce
- 2 lbs russet potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup milk
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, add olive oil and sauté chopped onions and minced garlic until translucent.
- Stir in the ground beef (or turkey) and cook until browned. Season with salt and pepper.
- Add diced carrots and frozen peas; sauté for about 5 minutes until slightly softened.
- Pour in the beef broth and Worcestershire sauce. Let it simmer for about 10 minutes until slightly thickened.
- Meanwhile, boil the peeled potatoes until fork-tender, then mash them with butter, milk, and salt until fluffy.
- Transfer the meat mixture into a baking dish and top with the mashed potatoes, creating peaks for extra crispiness.
- Bake for 20-25 minutes or until the potato topping is golden brown.
Notes
- For added flavor, consider mixing in herbs like thyme or rosemary with the meat filling.
- You can substitute mashed potatoes with cauliflower mash or sweet potatoes for a lighter twist.
