- 1 lb shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium red onion, sliced
- 2 tbsp olive oil
- 2 tbsp taco seasoning
- Juice of 1 lime
- 8 small flour or corn tortillas
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine shrimp with olive oil and taco seasoning. Toss until well coated.
- Add the sliced bell peppers and onions; mix well.
- Spread the mixture evenly on a parchment-lined sheet pan.
- Bake for 10-12 minutes or until shrimp are pink and opaque.
- Squeeze fresh lime juice over the fajitas before serving with warm tortillas.

- Add diced pineapple or mango for a sweet twist.
