- 1 lb beef strips (sirloin or flank steak)
- 2 cups mixed bell peppers (red, yellow, green), sliced
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 3 cups cooked rice (white or brown)
- 3 tbsp low-sodium soy sauce
- 2 tbsp sesame oil
- 2 green onions, chopped for garnish
Instructions
- Slice the beef into thin strips and chop the bell peppers and onion.
- Heat sesame oil in a large skillet over medium-high heat. Sear the beef strips until browned on all sides.
- Add sliced onions and bell peppers to the skillet. Stir-fry for about 3-5 minutes until slightly softened but still crunchy.
- Incorporate minced garlic during the last minute of cooking. Pour in soy sauce and stir until evenly coated.
- Serve over bowls of cooked rice and garnish with chopped green onions.
