- 1 pound chicken sausage, sliced
- 3 bell peppers (1 red, 1 yellow, 1 green), sliced
- 1 large sweet onion, diced
- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil

- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook until browned on all sides, about 8 minutes.
- Add diced onion and minced garlic; sauté until onions are translucent, approximately 3-4 minutes.
- Stir in bell pepper strips and cook until they soften slightly but remain crunchy, around 5-7 minutes.
- Season with dried oregano, salt, and pepper, stirring to combine. Let the flavors meld for another 3-5 minutes.
- Serve immediately over rice or pasta, or enjoy on its own.
