Roasted Cabbage-Steak Spanakopita Melts are delightful bites of crispy cabbage, creamy cheese, and fresh herbs enveloped in flaky pastry. Perfect for entertaining or a cozy night in.

  • Total Time: 1 hour
  • Yield: Serves 4 (1 melt per serving) 1x

Ingredients

Scale
  • 1 medium green cabbage
  • 2 tbsp extra virgin olive oil
  • 1 cup crumbled feta cheese
  • 2 cups fresh spinach (or 1 cup frozen, thawed)
  • 4 cloves garlic, minced
  • 1 sheet puff pastry, thawed
  • Juice of 1 lemon
  • 2 tbsp fresh dill or parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the cabbage into half-inch thick rounds. Brush both sides with olive oil and season with salt and pepper. Arrange on the baking sheet.
  3. Sprinkle minced garlic over the cabbage steaks and roast for 25-30 minutes until golden brown.
  4. While roasting, combine feta cheese, spinach, lemon juice, and herbs in a bowl.
  5. Once the cabbage is slightly cooled, place it on puff pastry squares, top with filling, and fold into packets.
  6. Bake for an additional 15-20 minutes until the pastry is golden brown.

Notes

  • Feel free to substitute feta with ricotta or cottage cheese for variation.
  •  Enhance nutrition by adding kale along with spinach.
  •  Use leftover roasted vegetables in the filling for added flavor.
