- 1 medium green cabbage
- 2 tbsp extra virgin olive oil
- 1 cup crumbled feta cheese
- 2 cups fresh spinach (or 1 cup frozen, thawed)
- 4 cloves garlic, minced
- 1 sheet puff pastry, thawed
- Juice of 1 lemon
- 2 tbsp fresh dill or parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the cabbage into half-inch thick rounds. Brush both sides with olive oil and season with salt and pepper. Arrange on the baking sheet.
- Sprinkle minced garlic over the cabbage steaks and roast for 25-30 minutes until golden brown.
- While roasting, combine feta cheese, spinach, lemon juice, and herbs in a bowl.
- Once the cabbage is slightly cooled, place it on puff pastry squares, top with filling, and fold into packets.
- Bake for an additional 15-20 minutes until the pastry is golden brown.
Notes
- Feel free to substitute feta with ricotta or cottage cheese for variation.
- Enhance nutrition by adding kale along with spinach.
- Use leftover roasted vegetables in the filling for added flavor.
