- 2 ripe avocados, sliced
- 2 oranges, segmented
- 1 grapefruit, segmented
- ½ red onion, thinly sliced
- ¼ cup extra-virgin olive oil
- 2 tablespoons honey or agave syrup
- Salt and pepper to taste
Instructions
- Rinse the spinach under cold water and dry thoroughly.
- Peel the oranges and grapefruit, then cut them into segments while reserving any juice.
- Slice the avocados and toss them gently with lime juice to prevent browning.
- In a large bowl, combine the spinach, citrus segments, avocado slices, and red onion.
- In a small bowl, whisk together the olive oil, honey (or agave), reserved citrus juice, salt, and pepper to create the dressing.
- Drizzle the dressing over the salad just before serving and toss gently.
Notes
- For added crunch, consider mixing in nuts like walnuts or almonds.
- Crumbled feta or goat cheese can enhance flavor if desired.
- To customize the dressing, add a splash of Dijon mustard for an extra kick.
