- 1 cup fresh raspberries
- 3/4 cup granulated sugar
- 1 cup all-purpose flour (or gluten-free flour)
- 1/2 cup unsalted butter, softened
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a bowl, mix flour, oats, sugar, baking powder, and salt. Add softened butter and blend until crumbly.
- In another bowl, combine raspberries, lemon juice, and sugar. Let sit while preparing the crust.
- Press half of the crust mixture into the baking dish. Spread the raspberry mixture on top and crumble the remaining crust over it.
- Bake for 30-35 minutes until golden brown. Allow to cool before slicing into squares.
Notes
- Substitute raspberries with blueberries or blackberries for a different flavor.
- For added zest, sprinkle some lemon zest over the raspberry filling before baking.
