Ingredients

  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour (or gluten-free flour)

  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix flour, oats, sugar, baking powder, and salt. Add softened butter and blend until crumbly.
  3. In another bowl, combine raspberries, lemon juice, and sugar. Let sit while preparing the crust.
  4. Press half of the crust mixture into the baking dish. Spread the raspberry mixture on top and crumble the remaining crust over it.
  5. Bake for 30-35 minutes until golden brown. Allow to cool before slicing into squares.
