- 3 lbs beef chuck roast
- 2 tsp Italian seasoning
- 2 cups beef broth
- 1 cup sliced bell peppers (mixed colors)
- 1 cup sliced onions (sweet)
- 4 hoagie buns
- 1 cup giardiniera (for topping)
- 4 slices provolone cheese
Instructions
- Season the beef chuck roast generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and sear each side of the roast for about 3-4 minutes until browned.
- Transfer the roast to a slow cooker. Pour in the beef broth and sprinkle Italian seasoning over the top. Cook on low for 6-8 hours until fork-tender.
- About 30 minutes before serving, add sliced bell peppers and onions to the slow cooker to soften.
- Slice hoagie buns open without cutting all the way through and lightly toast them under the broiler until golden brown.
- Assemble sandwiches by piling shredded beef onto toasted buns, topping with provolone cheese, then broiling until melted. Finish with giardiniera.
Notes
- For added flavor, consider adding sautéed mushrooms or spicy peppers as toppings.
- Leftover beef can be stored in an airtight container in the fridge and reheated on the stovetop or microwave.
