Ingredients

  • 3 lbs beef chuck roast
  • 2 tsp Italian seasoning
  • 2 cups beef broth
  • 1 cup sliced bell peppers (mixed colors)
  • 1 cup sliced onions (sweet)
  • 4 hoagie buns
  • 1 cup giardiniera (for topping)
  • 4 slices provolone cheese

Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear each side of the roast for about 3-4 minutes until browned.
  3. Transfer the roast to a slow cooker. Pour in the beef broth and sprinkle Italian seasoning over the top. Cook on low for 6-8 hours until fork-tender.
  4. About 30 minutes before serving, add sliced bell peppers and onions to the slow cooker to soften.
  5. Slice hoagie buns open without cutting all the way through and lightly toast them under the broiler until golden brown.
  6. Assemble sandwiches by piling shredded beef onto toasted buns, topping with provolone cheese, then broiling until melted. Finish with giardiniera.
