Instructions
- Gather all ingredients. Mince garlic and zest the lemon.
- In a bowl, mix chicken thighs with garlic, cumin, coriander, cinnamon, lemon juice, olive oil, salt, and pepper until evenly coated.
- Marinate at room temperature for 30 minutes or refrigerate for up to 2 hours.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Arrange marinated chicken on the baking sheet and bake for 25-30 minutes until internal temperature reaches 165°F (74°C) and chicken is golden brown.
- Remove from oven, let rest for five minutes, then garnish with parsley or cilantro before serving.
