- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 large ripe mango, diced
- 1/2 medium red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Dice the mango and onion, and chop the cilantro.
- Season chicken breasts with salt and pepper; let marinate for 30 minutes.
- Preheat grill to medium-high heat. Grill chicken for about 6-7 minutes per side until fully cooked (internal temperature of 165°F).
- In a bowl, combine diced mango, red onion, cilantro, lime juice, salt, and pepper.
- Once grilled, top each chicken breast with the mango salsa and serve immediately.
Notes
- For added flavor, marinate chicken longer or add jalapeños to the salsa for a spicy kick.
- Substitute mango with pineapple for a different tropical twist.
