- 1 lb lean ground beef
- 1 cup plain breadcrumbs
- 2 large eggs
- 1 medium onion, chopped
- ½ cup ketchup (plus extra for glaze)
- 2 lbs russet or Yukon gold potatoes, peeled and cubed
- ½ cup milk
- 4 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together ground beef, breadcrumbs, chopped onion, eggs, ketchup, salt, and pepper until well combined but not overmixed.
- Shape the mixture into a loaf on a baking sheet or in a loaf pan. Spread additional ketchup on top for a glaze.
- Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C).
- While the meatloaf is baking, boil cubed potatoes in salted water until tender (about 15-20 minutes). Drain and mash with milk and butter until creamy.
- Serve slices of meatloaf with generous portions of mashed potatoes.
