Savor the warmth of home with this easy meatloaf and potatoes dish. Perfectly seasoned and paired with creamy mashed potatoes, it’s the ultimate comfort food for family dinners.

  • Total Time: 1 hour 15 minutes
  • Yield: Serves 6

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 medium onion, chopped
  • ½ cup ketchup (plus extra for glaze)
  • 2 lbs russet or Yukon gold potatoes, peeled and cubed
  • ½ cup milk
  • 4 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together ground beef, breadcrumbs, chopped onion, eggs, ketchup, salt, and pepper until well combined but not overmixed.
  3. Shape the mixture into a loaf on a baking sheet or in a loaf pan. Spread additional ketchup on top for a glaze.
  4. Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C).
  5. While the meatloaf is baking, boil cubed potatoes in salted water until tender (about 15-20 minutes). Drain and mash with milk and butter until creamy.
  6. Serve slices of meatloaf with generous portions of mashed potatoes.

Notes

  • For added moisture and nutrition, consider mixing in grated vegetables like zucchini or carrots.
  • Substitute ketchup with barbecue sauce for a smoky flavor twist.
  •  Let the meatloaf rest for a few minutes before slicing to maintain juiciness.
