- 1 lb lean ground beef
- 1 cup breadcrumbs (plain or Italian-seasoned)
- ½ cup freshly grated Parmesan cheese
- ¼ cup fresh parsley, finely chopped
- 2 cups marinara sauce
- 4 sub rolls
- 1½ cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, salt, and pepper until combined. Avoid overworking the mixture.
- Shape into golf ball-sized meatballs and place on a baking sheet. Bake for about 20 minutes until golden brown.
- While meatballs bake, heat marinara sauce in a saucepan over medium heat until bubbling.
- Slice open each sub roll and fill with warm meatballs. Drizzle with marinara sauce.
- Top with shredded mozzarella and broil for 2-3 minutes until cheese is bubbly.
- Serve hot with extra marinara on the side.
Notes
- For a lighter option, substitute ground beef with ground turkey or chicken.
- Add chopped spinach to the meatball mixture for extra nutrition.
