- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 2 teaspoons freshly cracked black pepper
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
- 1 teaspoon salt
- Fresh parsley or basil (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and black pepper.
- Place the chicken in a zip-top bag or shallow dish and pour the marinade over it. Seal tightly and refrigerate for at least 30 minutes.
- Heat some olive oil in a skillet over medium-high heat. Sear the marinated chicken for about 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to the prepared baking sheet and bake for 20-25 minutes or until it reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for five minutes before slicing. Garnish with fresh herbs if desired.

- For added flavor, consider using lime juice instead of lemon.
- Serve with steamed rice or a fresh garden salad for a complete meal.
