  • 2 tablespoons olive oil
  • 1 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic powder, salt, and black pepper.
  3. Place the chicken in a zip-top bag or shallow dish and pour the marinade over it. Seal tightly and refrigerate for at least 30 minutes.
  4. Heat some olive oil in a skillet over medium-high heat. Sear the marinated chicken for about 3-4 minutes on each side until golden brown.
  5. Transfer the seared chicken to the prepared baking sheet and bake for 20-25 minutes or until it reaches an internal temperature of 165°F (75°C).
  6. Let the chicken rest for five minutes before slicing. Garnish with fresh herbs if desired.
