- 4 fresh cod fillets (about 6 oz each)
- 2 lemons (juiced and zested)
- 2 tbsp extra virgin olive oil
- 3 garlic cloves (minced)
- 2 tbsp fresh parsley (chopped)
- 2 tbsp fresh dill (chopped)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
- In a small bowl, combine olive oil, minced garlic, parsley, dill, lemon zest, salt, and pepper.
- Arrange the cod fillets in the baking dish and generously brush them with the herb mixture.
- Drizzle freshly squeezed lemon juice over each fillet.
- Bake for 15-20 minutes until the cod is opaque and flakes easily with a fork.
Notes
- For added flavor, marinate the cod in lemon juice and herbs for 30 minutes before cooking.
- Swap herbs based on preference; try basil or tarragon for a different twist.
- Serve with roasted vegetables or a light salad for a complete meal.
