- 9 lasagna noodles
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- 1/2 cup freshly grated Parmesan cheese
- 1 cup fresh spinach (chopped)
- 2 cups marinara sauce
- 1 tsp Italian seasoning
- Salt & pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat.
- In a large bowl, mix ricotta cheese, 1 cup of mozzarella cheese, chopped spinach, Italian seasoning, salt, and pepper until well combined.
- Spread about 1/4 cup of the filling onto each noodle and roll tightly. Place seam-side down in a greased baking dish.
- Pour marinara sauce generously over the rolls and sprinkle with remaining mozzarella cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden brown and bubbly. Let cool slightly before serving.
Notes
- For added flavor, use fresh herbs like basil or parsley.
- Feel free to substitute ricotta with cottage cheese for a lighter option.
- To prevent sticking, lightly oil the lasagna noodles before rolling.
