  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup fresh spinach (chopped)
  • 2 cups marinara sauce
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat.
  2. In a large bowl, mix ricotta cheese, 1 cup of mozzarella cheese, chopped spinach, Italian seasoning, salt, and pepper until well combined.
  3. Spread about 1/4 cup of the filling onto each noodle and roll tightly. Place seam-side down in a greased baking dish.
  4. Pour marinara sauce generously over the rolls and sprinkle with remaining mozzarella cheese.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden brown and bubbly. Let cool slightly before serving.
