- 1 lb boneless, skinless chicken thighs
- 2 tbsp chipotle peppers in adobo sauce, finely chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lime juice
- 1 tsp garlic powder
- 1 tsp cumin powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine chopped chipotle peppers, olive oil, lime juice, garlic powder, cumin powder, salt, and pepper until well mixed.
- Place the chicken thighs in a bowl or ziplock bag and pour the marinade over them. Massage the marinade into the chicken and let it marinate for at least 30 minutes (longer for enhanced flavor).
- Arrange the marinated chicken on a parchment-lined baking sheet and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
- Allow the chicken to rest for about 5 minutes before serving. Garnish with fresh cilantro and enjoy with rice or tortillas.
Notes
- For milder flavors, substitute chipotle seasoning with smoked paprika.
- Add honey to the marinade for a touch of sweetness.
- Toss seasonal vegetables on the baking sheet alongside the chicken for a complete meal.
