- 1 lb Italian sausage (mild or spicy)
- 12 oz penne pasta
- 4 cloves fresh garlic, minced
- 28 oz canned diced tomatoes
- 2 tbsp extra virgin olive oil
- 1/2 cup fresh basil, chopped
- 1/2 cup grated Parmesan cheese
- 1 tsp red pepper flakes (optional)
Instructions
- Prepare all ingredients by chopping garlic and basil, and measuring out the pasta and tomatoes.
- In a large skillet over medium heat, heat olive oil and add sliced Italian sausage. Cook until browned, about 5-7 minutes.
- Add minced garlic to the skillet and sauté until fragrant, about 1 minute. Pour in canned diced tomatoes with their juices.
- Let the sauce simmer gently over low heat for about 10 minutes until thickened; stir occasionally.
- Meanwhile, cook penne pasta according to package instructions until al dente. Drain and reserve some pasta water.
- Combine drained pasta with the sauce in the skillet, adding reserved pasta water if needed for desired consistency. Serve hot.

- Add spinach or zucchini for added veggies.
