- 1 cup fresh strawberries, diced
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 large eggs, room temperature
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tbsp milk (for glaze)
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Toss diced strawberries with a tablespoon of flour to prevent sinking. Set aside.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat eggs with vegetable oil, vanilla extract, and milk until smooth.
- Combine wet ingredients into dry ingredients and mix until just incorporated. Gently fold in the floured strawberries.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
- For the glaze, mix powdered sugar with milk until smooth. Drizzle over warm bread once slightly cooled.
Notes
- Use ripe strawberries for the best sweetness.
- Let the bread cool completely before glazing for a perfect presentation.
- Substitute half of the all-purpose flour with whole wheat for added nutrition or mix in chocolate chips for extra flavor.
