- 1 cup medium-ground cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp fine sea salt
- 1 cup whole milk
- 2 large eggs
- 1/4 cup melted butter
- 2–3 fresh jalapenos, diced
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C) and grease an 8-inch square baking dish.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
- In another bowl, mix milk, eggs, and melted butter until smooth. Pour into dry ingredients and stir gently until just combined.
- Fold in diced jalapenos and cheese if using.
- Pour batter into the prepared dish and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Let cool slightly before slicing and serve warm.
Notes
- For added sweetness and texture, consider mixing in a half-cup of corn kernels.
- Adjust the number of jalapenos based on your heat preference; removing seeds will reduce spiciness.
