  • 3 large eggs
  • 1 cup mashed ube (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl until mixed well.
  2. Press the mixture into the bottom of a springform pan and bake for 10 minutes. Let it cool.
  3. In a mixing bowl, beat cream cheese until smooth; gradually add sugar until fluffy.
  4. Stir in sour cream and vanilla extract, then incorporate eggs one at a time. Fold in mashed ube until well combined.
  5. Pour filling into the cooled crust and bake for about 60 minutes or until set but slightly jiggly in the center. Turn off the oven and let it cool inside with the door ajar.
