Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, cream the sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the diced apples gently.
- Pour the batter into the prepared pan and bake for 45-50 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan before transferring to a wire rack.
