- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- ¼ cup honey
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
- Gently fold in the chopped peaches.
- Fill each cupcake liner about two-thirds full with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean.
- While cupcakes cool, beat cream cheese, powdered sugar, and honey together until fluffy to create the frosting.
- Frost cooled cupcakes and enjoy!
Notes
- For added flavor, consider sprinkling cinnamon into the batter.
- You can substitute fresh peaches with nectarines for a different twist.
- Store in an airtight container at room temperature for up to three days.
