Ingredients

  • 1 cup fresh mint leaves
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Wash the mint leaves thoroughly. In a saucepan over medium heat, combine heavy cream and whole milk. Add mint leaves and heat until steaming (do not boil).
  2. Remove from heat, stir in sugar until dissolved, and let steep for 30 minutes.
  3. Strain out the mint leaves using a fine mesh strainer. Stir in vanilla extract and salt.
  4. Refrigerate the mixture for at least 2 hours to chill.
  5. Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions (about 20-25 minutes).
  6. Gently fold in chocolate chips during the last few minutes of churning.
  7. Transfer to an airtight container and freeze for at least 4 hours before serving.

Notes

  • Adjust mint flavor by adding more or less peppermint extract.
  • For fun variations, try adding crushed cookies or using different types of chocolate.
