- 1 cup fresh mint leaves
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/2 cup semi-sweet chocolate chips
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Wash the mint leaves thoroughly. In a saucepan over medium heat, combine heavy cream and whole milk. Add mint leaves and heat until steaming (do not boil).
- Remove from heat, stir in sugar until dissolved, and let steep for 30 minutes.
- Strain out the mint leaves using a fine mesh strainer. Stir in vanilla extract and salt.
- Refrigerate the mixture for at least 2 hours to chill.
- Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions (about 20-25 minutes).
- Gently fold in chocolate chips during the last few minutes of churning.
- Transfer to an airtight container and freeze for at least 4 hours before serving.
Notes
- Adjust mint flavor by adding more or less peppermint extract.
- For fun variations, try adding crushed cookies or using different types of chocolate.
